    List of Ingredients




    1 tbsp. + 1 tbsp. butter, divided
    1 c. Basmati rice
    2 c. water
    2 c. fresh corn kernels
    3 large thinly sliced shallots
    1/2 tsp. white sugar
    salt and pepper to taste
    2 tsp. freshly chopped mint leaves or 3/4 tsp. dried, optional

    Melt 1 tbsp. of the butter in a small saucepan over a medium heat.
    Stir in the rice.
    Add the water, and bring to a boil.
    Reduce heat, cover and simmer for 16 - 18 minutes, or until the water is absorbed and the rice is tender.
    Meanwhile, melt the other 1 tbsp. butter in a large frying pan over a medium heat.
    Stir in the corn, shallots, sugar, salt and pepper.
    Cook, stirring occasionally, for 4 - 6 minutes, or until tender.
    In a serving bowl combine the cooked rice, corn mixture and mint.
    Makes 5 servings.
