    Cream of Sweet Potato Soup

    List of Ingredients




    4 pounds sweet potatoes
    9 cups water
    1/3 cup butter
    1/2 cup tomato sauce
    4 tablespoons half + half, or
    ...2 tablespoons cream and
    ...2 tablespoons milk
    1 teaspoon salt
    1/8 teaspoon pepper
    dash thyme
    1/2 cup split cashews, optional

    Recipe



    Preheat oven to 375 degrees F.
    Bake the sweet potatoes for 45 minutes or until done.
    Let cool.
    Remove skin and place into a large bowl.
    Mash for 30 seconds so they are not lumpy.
    Scrape into a large saucepan.
    Using a medium heat, add the remaining ingredients.
    Stir to combine.
    When soup begins to boil, simmer for 1 hour or so.
    Pour into bowls and sprinkle with nuts, if desired.
    Makes 6 servings.
