    Stuffing Muffins

    Stuffing Muffins

    1 package boxed stuffing mix of your choice
    chicken broth
    butter

    Heat oven to 400 degrees F.
    Coat a 6 hole muffin pan with cooking spray.
    Fill each 3/4 full with stuffing mix.
    Add enough broth to fill each muffin hole about 1/2 way.
    The mix will absorb the broth.
    Place a small dollop of butter on top of each.
    Bake for 20 minutes or so, until top is crunchy.
    Remove stuffing muffins from pan and serve as a side dish.

    These refrigerate and freeze nicely.

    Notes:
    Any kind of broth will do.
    Try very finely chopping up some celery, onions, and bell pepper.
    Add to broth and boil for a few minutes before saturating the
    stuffing, stirring lightly.
    I really like these critters, more so because there's lots of
    room for experimentation.
