    Cheez Whiz Substitute

    1 pound Cheddar cheese, in small pieces
    2 cups evaporated milk
    1 1/2 teaspoons salt
    1 1/2 teaspoons dry mustard
    2 beaten eggs

    Melt cheese in top of double boiler.
    Then add evaporated milk, salt and mustard.
    Remove from heat and stir in eggs.
    Return to double boiler to cook and stir until eggs thicken sightly.
    Remove from heat.
    Pour into jars.
    (Cool slowly, placing a cover of plastic wrap on top to prevent
    a crust from forming)
    Remove plastic wrap from top, replace with lids.
    Store in refrigerator. Keeps several weeks.
