    1 deep dish pizza dough,
    ...(or buy some from your local
    1 tbsp oil from oil packed sun dried tomatoes
    1 medium finely chopped onion
    1 minced garlic clove
    1 c. Ricotta cheese, (8oz.)
    1/4 c. chopped sun dried tomatoes
    2 tsp. dried parsley
    1/4 lb sliced Prosciutto or dry salami, cut into strips
    2 c. shredded Mozzarella cheese
    cornmeal, for baking sheet
    Olive oil

    Prepare the pizza dough and let it rise.
    While the dough rises, prepare the filling.
    Use a medium frying pan to heat the tomato oil over a moderate heat.
    Add the onion and cook until soft but not browned.
    Mix in garlic, then remove from heat.
    Use a medium bowl to mix the Ricotta cheese with the dried tomatoes and
    parsley.
    Then stir in cooked onion mixture.
    Preheat oven to 450. Grease a large baking sheet.
    Divide the dough into 2 equal portions.
    Roll each half out on a floured surface to a 12" circle.
    Spread half of the ricotta filling on half of each circle of dough, leaving
    a 1/2" from edge.
    Sprinkle the filling with half of the Prosciutto strips and 1 c. of the
    Mozzarella cheese.
    Fold the circles in half, over the filling, moistening and pinching edges
    together to seal.
    Sprinkle the greased baking sheet lightly with cornmeal.
    Place the calzones well apart on the baking sheet.
    Let rise 12 - 15 minutes, until puffy.
    Brush the tops lightly with olive oil, then serve hot.
