    Sun Dried Tomato Rigatoni

    It goes great with a small salad and some steaming hot Italian bread.

    List of Ingredients




    1 onion, sliced in 1/4" thick slices, then cut in 1/2
    3 to 6 cloves chopped garlic, depends on your taste
    1 to 1 1/2 c. quartered sun dried tomatoes, depends on your taste
    3 c. vegetable broth
    1/4 tsp. dried oregano
    1/4 tsp. dried basil
    1lb. hot cooked rigatoni pasta

    Recipe



    In a pot, bring vegetable broth to a boil, turn down and simmer.
    Discard the smaller centers of the onion, and use the larger pieces.
    In another pot, put onion, garlic and about 1/2 c. of the vegetable broth. Cook for 5 minutes or until the onion slices become translucent.
    Add the dried tomatoes and the remaining simmered vegetable stock.
    Bring to a boil, then gently simmer, barely bubbling for 15 - 20 minutes.

    After pasta is cooked, drain, and then place back in the same pot you cooked it in.
    Add the herbs to the tomato mixture and stir.
    Combine the tomato mixture into the pasta pot. Stir to mix.
    Makes 4 servings.
