    Tips About Using Honey

    - Because of its high fructose content, honey has a higher sweetening power than sugar.
    This means you can use less honey than sugar in your recipe.
    To start with, try matching honey and sugar cup for cup.
    Then you can reduce the amount of honey by using 1/2 to 3/4 as much honey as white sugar in recipes.


    - Also, reduce liquid by 1/4 c., but if there is no liquid to reduce, add 2 tbsp. of flour for each cup of honey used, or enough flour to give the desired consistency.


    - When measuring honey, 1 12oz. jar of honey equals a standard measuring cup.


    - Honey can be measured easily by using the same cup used for measuring the oil in a recipe
    OR
    by coating a cup or spoon with a non stick vegetable spray. The honey will slide right out.


    - You should always add 1/2 tsp. of baking soda for every cup of honey used
    AND bake at a temperature of 25 degrees lower than the instructions call for.
