    Baked Ham with Apricot Horseradish Glaze

    1 1/2 lb. piece fully cooked
    boneless ham
    Whole cloves
    1 small sweet potato,
    cut into 3/4-inch cubes (about 8 ounces)
    1/4 pound Brussels sprouts, halved
    2 ounces red pearl onions, halved
    or 1/2 small red onion, chopped
    1/3 cup apricot preserves
    or orange marmalade
    1 teaspoon drained bottled horseradish
    1/4 teaspoon dried tarragon
    or 1 teaspoon chopped fresh tarragon
    1/4 cup orange juice
    Adjust the shelf/rack of a Black & Decker® Toast-R-OvenT 3000 Series to the
    lower level. Set the oven to 350°F; heat 5 minutes. Line the oven pan with
    foil.
    Using a sharp knife, score ham in a diamond patter. Press cloves into ham.
    Place on oven tray; surround with sweet potatoes, Brussels sprouts and
    onion.
    In a small bowl, combine preserves, horseradish and tarragon. Brush half the
    mixture onto the ham. Into the remaining mixture, stir in orange juice. Pour
    over vegetables. Loosely cover vegetables with foil.
    Cook 40 to 50 minutes or until ham is heated through and vegetables are
    tender.
    Note: Hams vary in shape. Before heating the Toaster-R-Oven, check to see
    the ham will fit into the oven without touching the heating elements. If ham
    is too high, cut in half and place cut-side down on oven pan. (The amount of
    vegetables might have to be reduced.)
    Makes about 4 servings.
