    Chinese Plum Chicken

    1/4 cup Chinese plum sauce or orange marmalade
    1/4 cup soy sauce
    4 tablespoon orange juice
    3 tablespoon honey
    1 clove garlic, minced
    1 teaspoon fresh gingerroot, minced
    2 scallions (green onions), thinly sliced
    2 chicken breast halves
    1/4 pound fresh snow peas, string removed
    1/2 medium size red bell pepper, thinly sliced
    1/2 medium size yellow bell pepper, thinly sliced

    In a small bowl stir together plum sauce, soy sauce, orange juice, honey,
    garlic, gingerroot, and scallions. Set a Black & Decker® Toast-R-Oven
    1000-3000 series to 375F. Heat for 5 minutes. Line the oven pan with foil.
    Place chicken breasts, skin-side up, in prepared oven tray. Spoon 1/4 cup
    sauce over each piece. Cover tightly with foil and bake for 30 minutes.
    Remove foil and baste each piece with an additional 1/4 cup sauce. Bake 25
    minutes. Increase temperature to 500F. Baste chicken with pan juices. Bake
    an additional 5 minutes. Remove chicken to a plate and cover with foil to
    keep warm. Drain off any remaining juice from the oven tray. Toss the snow
    peas and bell peppers in the bowl with the remaining sauce. Spoon vegetables
    onto oven tray and bake at 500F for 5-7 minutes until heated through.
