    Valve Usage

    The valve is used for several reasons.

    In baking it assists the cake to rise as well as to cook the bottom
    of the cake pan (by having the valve open heat is drawn up through
    the unit and therefore cooking the bottom of the cake); and with
    the valve closed, you cook the top more (because with the valve
    closed the heat and steam circulate instead of venting out the
    opening of the cover).

    For the same reason, the heat is lowered and raised in sequence
    with the valve opening and closing. With the valve open you
    compensate for the loss of heat (that would circulate) by increasing
    the steam. By closing the valve, the cover would rock and splatter all
    over, so this is why we lower the heat.

    Also, with the valve closed less heat is needed to boil the water
    because less is escaping (due to it being trapped inside the unit).
    Water is added to replace the boiled away water/moisture, (in the
    form of steam.)
