    Artichokes w/Garlic, steamed

    2 artichokes, washed, tips removed, and stem peeled
    2 tablespoons whole pepper corns
    2 bay leaves
    8-10 garlic cloves
    1 small lemon

    Put pepper, bay leaves, and garlic cloves into water. Squeeze lemon
    juice over artichokes, and drop lemon halves into either the water, or
    the steamer basked. Steam about 45 minutes, or until a meat fork
    pierces them very easily.

    Remove the garlic cloves and mash into mayonnaise, or melted butter to
    dip the artichoke leaves and heart into.

    I made a great discovery recently: cook whole potatoes in the same
    basket with the artichokes. After they are all done, about 45 minutes,
    remove everything from the steaming basket, and put a washed, whole
    cauliflower in the steaming basket. Cook for about 20 minutes. The
    sweetest, most delicious tasting potatoes and cauliflower I ever had.
    You can have a delicious, vegetarian meal with these 3 veggies. The
    fiber in the artichoke makes your tummy feel like you ate a 7 oz.
    steak! Mash the potatoes, or refrigerate them and make a delicious
    potato salad using your favorite recipe.
