    Black Eyed Pea Loaf

    2 tablespoons vegetable oil
    1/2 cup finely chopped onion
    1 teaspoon curry powder
    2 cups cooked black eyed peas, drained
    1/3 cup raw rolled oats
    1/2 cup yellow corn meal
    2 cups vegetable, or chicken stock
    salt
    freshly ground white or black pepper

    Preheat oven to 350 degrees F. Grease a 9 inch bread loaf pan.
    Use a large skillet to saute the onion int he oil, over a moderate
    heat, until the onion is golden.
    Stir in the curry for 1 or 2 minutes.
    Add the peas, oats, cornmeal, and stock. Stir together well.
    Pour into the loaf pan and bake for 45 minutes, or until the oats
    and cornmeal are cooked and have absorbed all the liquid.
    (This should be a consistency of a very thick gruel).
    Stir in salt and pepper to taste.
    Press the mixture firmly in the pan.
    Cool and then chill the loaf.
    Cut into slices and eat cold, OR fry in butter or shortening, just
    as you would scrapple or corn meal mush.
    Makes 4 - 6 servings.
