This dish freezes well. Wrap individually in freezer wrap. To reheat, thaw and heat in microwave for approximately 4 minutes on high.

    List of Ingredients

    1 medium head of cabbage
    1 tbsp. olive oil
    2 cloves pressed garlic
    1 medium chopped onion
    1 chopped green pepper
    3/4 lb. ground beef
    1 6oz. can tomato paste
    1 8oz. can tomato sauce
    1 tsp. dried oregano
    2 tsp. salt
    1 tsp. ground black pepper
    1 c. grated Mozzarella cheese
1/2 c. cottage cheese or ricotta
1/2 c. freshly grated Parmesan cheese

    Recipe

Preheat the oven to 350. Coat a 9x13x2" pan with olive oil.
Peel the leaves from the cabbage and steam until nearly tender, about 3 - 5 minutes. Set aside.
Put the olive oil in a large frying pan over a medium/high heat and saute the garlic, onion, and pepper until the onion is translucent.
Add the ground beef and brown thoroughly.
Drain or skim the fat and water off.
Add the tomato paste, sauce and seasonings to the mixture and stir well.
Line the bottom of the pan with a layer of cabbage leaves.
Top with half the meat mixture.
Sprinkle 1/3 of the Mozzarella on top.
Spread on 1/2 of the cottage cheese on top of that.
Put on another layer of cabbage leaves, the remaining meat, another 1/3 of the Mozzarella, and the remaining cottage cheese.
Sprinkle the top with the last 1/3 of the Mozzarella.
    Scatter the Parmesan on top.
Bake, covered for 20 minutes. Uncover and bake 5 more minutes.
Let cool, then cut into servings.
    Makes 8 servings.
