    Cauliflower + Tomato Casserole

    Cauliflower + Tomato Casserole

    2 cups water
    1 teaspoon salt
    1 head cauliflower cut into flowerets
    1/3 cup butter
    1 cup Tops Swiss cheese, shredded
    1/2 cup dried, seasoned bread crumbs
    1/2 teaspoon garlic salt
    Salt and pepper to taste
    3 medium tomatoes, peeled, seeded and cut into strips

    Bring water and salt to a boil in a large saucepan.
    Add cauliflower, cover and return to boil. Reduce heat
    and cook about 15 minutes or until cauliflow
    er is tender. Drain, then set aside.
    Melt butter on low heat in a small saucepan.
    Stir in Swiss cheese, breadcrumbs, garlic salt, salt
    and pepper.
    Sprinkle 1/2 of crumb mixture over bottom of a 1 1/2
    baking dish.
    Place cauliflower and then the tomatoes on top.
    Sprinkle with remaining crumb mixture.
    Bake at 375 degrees F. for 20 minutes until golden brown.
    Makes 4 servings.
