    Double Baked, Sweetened Sweet Potatoes

    Double Baked, Sweetened Sweet Potatoes

    6 whole medium size sweet potatoes, scrubbed
    3 tablespoons vegetable oil
    1, 8 ounce package softened cream cheese
    1/3 to 1/4 cup light brown sugar,
    ...according to your preferred sweetness
    4 tablespoons butter
    1 tablespoon vanilla extract
    3/4 teaspoon salt
    1/2 teaspoon pepper
    1/3 cup chopped walnuts, optional

    Preheat oven to 400 degrees.
    Rub the sweet potato skins with the oil.
    Wrap each one separately, in aluminum foil.
    Bake 1 hour, or until soft when poked/tested in the
    center.
    Remove from oven and carefully unwrap.
    Cover loosely with foil and set aside.
    Combine the cream cheese, sugar, butter, vanilla,
    salt and pepper together in a large bowl.
    Slice each baked potato in half lengthwise.
    Leaving about 1/4 inch shell, scoop the insides into the
    cream mixture. Caution!! They will still be very hot, so
    try using a clean towel to hold the potato in your hand.
    Add the walnuts and mix everything together well.
    Then spoon evenly back into each potato shell.
    Bake for 10 - 15 minutes at 350 degrees F., just to heat
    through.
    Makes 12, 1/2 of a sweet potato servings.
