Escalloped Tomato + Cheese Casserole

Make a butter sauce with:
2 Tablespoons butter
2 Tablespoons flour
Cook with:
1 cup hot water
and season with salt and pepper

Place a layer of bread crumbs in a buttered
baking dish.
Cover with bits of tomato.
Then a layer of crumbs.
Followed by grated cheese.
Continue until the dish is full, making sure
to have a generous sprinkling of grated cheese
on top.
Pour the hot butter sauce over all.
Bake at 350 degrees F. until brown.
