    This is much better then the usual green bean casserole.
    Enjoy!
    I substituted a small chopped onion for the shallots and
    added a minced clove of garlic. They were wonderful!

    List of Ingredients




    Green Beans Parmesan

    2 pounds fresh green beans -- trimmed
    2 tablespoons butter or margarine
    8 large shallots -- sliced
    1/4 teaspoon salt
    1/4 teaspoon freshly ground pepper
    1/3 cup shredded Parmesan cheese

    Cook green beans in boiling water to cover for 10 to 12 minutes or until
    tender; drain.
    Melt butter in a large saucepan over medium-high heat; add shallots and
    saute 12 to 15 minutes or until golden brown. Remove from heat. Stir in
    beans, salt and pepper. Toss with cheese and serve immediately.
    Makes 8 servings.

    Notes:
    To make ahead,
    cook beans as directed. Drain beans and
    place in a zip lok bag. Seal and chill.
    To reheat,
    saute shallots, add
    green beans salt and pepper, stirring until mixture is thoroughly
    heated. toss with cheese.
