    Honey Glazed Sweet Potatoes w/Apples

    about 5 pounds medium sized sweet potatoes
    5 medium Granny Smith apples
    juice of 1 lemon
    6 tablespoons butter
    3/4 cup honey
    1/2 teaspoon pumpkin pie spice
    ...(if you don't have this, see
    ...my seasonings catagory to
    ...mix your own)

    Preheat oven to 375 degrees F. Bake the potatoes for 1 hour, cool.
    Remove the skins and cut into thick slices. Peel, halve and core apples
    and cut into thick slices. Toss sweet potatoes and apples with lemon
    juice. Melt 5 tablespoons of the butter and combine with the honey and
    pumpkin pie spice. Grease a 3 to 3 1/2 quart casserole dish with the
    remaining butter. Cover the bottom of the casserole with some potato
    slices. Top with layer of apple slices. Drizzle with half the honey
    mixture. Alternately layer the potatoes, and apples in the dish, drizzle
    each layer with some of the honey mixture, ending with the honey mixture
    onto.
    Bake 40 minutes and baste potatoes and apples several times with the
    honey mixture. Brown under the broiler until edges of apples are golden,
    about 2 or 3 minutes.
