    Recipe Introduction

    This is a meal in itself. Amounts are to personal preference as some like a higher potato to vegetable ratio or vise versa.

    List of Ingredients

    leftover - Irish Potatoes

    a batch of your leftover mashed potatoes
    coarsely chopped bacon
    coarsely chopped onions
    coarsely chopped cabbage
    grated cheese

    Fry the bacon until there is enough grease to add cabbage
    and onions in without being dry.
    Saute to your desired doneness.
    (Some like to cook it until it just starts to carmalize.)
    Drain most of the drippings, but not all as they add a lot
    of flavor.
    Carefully stir in the leftover potatoes.
    Heat, if necessary.
    Mix bacon, onion and cabbage with mashed potatoes.
    Reheat if needed.
    Top with a little grated cheese.
