    List of Ingredients




    3 c. diced potatoes
    1/2 medium, finely chopped onion
    3 tbsp. butter
    3 tbsp. flour
    1 1/2 c. milk
    3/4 c. grated Cheddar cheese
    salt and ground black pepper to taste
    pinch of nutmeg, or a fresh grating
    1 4oz. jar drained, chopped pimientos

    Recipe



    Preheat oven to 350. Butter a baking dish.
    Steam the potatoes and onion together for 5 minutes.
    Heat the butter in a saucepan over a medium heat.
    Stir in the flour and cook for 2 - 3 minutes.
    Stir in the milk and bring to a boil, stirring frequently.
    Remove from the heat and stir in the cheese, salt, pepper and nutmeg.
    Mix the potato mixture with the pimentos and place in the baking dish.
    Top with the sauce and bake for 45 minutes, until the potatoes are tender.
    Makes 4 - 6 servings.
