    Potato Pancakes #2

    2 1/2 cups freshly grated potatoes
    4 Tablespoons freshly chopped onion
    1 teaspoon salt
    2 large eggs
    3 Tablespoons flour

    Mix all ingredients together.
    Heat large heavy skillet with small amount of oil.
    Drop batter in and spread thin with the back of a spoon.
    Fry until crisp on both sides.
