    Potatoes, stuffed, w/Crabmeat

    4 medium baking potatoes
    1 tbsp. I Can't Believe It's Not Butter Light
    1/3 c. skim milk
    1/4 tsp. pepper
    1 c. low fat shredded Cheddar cheese, (4oz.)
    1/4 c. finely chopped green onions or 1 tbsp. dried chives
    1 6oz. can crabmeat, drained and picked over, or 1 8oz. pkg. chopped
    imitation crabmeat
    paprika

    Scrub the potatoes and poke with a fork a few times.
    Boil the potatoes for 25 minutes, then bake for another 20 - 25 minutes
    or until tender. When cool enough, cut in half lengthwise.
    Scoop out the pulp into a bowl, leaving a 1/4" thin shell. Set aside.
    Beat or mash the potato pulp with the butter light, milk and pepper until
    smooth. Stir in the cheese and onions with a fork. Gently mix in the crabmeat.
    Stuff each potato shell with the mixture. Sprinkle with paprika.
    Return to the oven and bake for 15 minutes or until heated through.
    Makes 8 servings.
