    This so good that even picky kids will like it. This can also be served hot or cold.

    Spinach Casserole #1, w/croutons

    2, 10 ounces packages frozen chopped spinach,
    ...thawed, drained and squeezed dried
    1 large egg
    1 tsp. salt
    1/4 tsp. ground black pepper
    1 finely chopped small onion
    1 1/2 c. shredded Cheddar cheese, sharpness up to you
    1 10 3/4oz. can condensed cream of celery soup
    1 - 2 c. seasoned croutons, or unseasoned

    Preheat the oven to 350. Butter a 2 quart baking dish.
    Using a large bowl, combine the all the ingredients, except the croutons, and combine well.
    Pour into the baking dish.
    Top with your favorite croutons.
    Bake for 35 - 40 minutes, or until it is bubbling around the edges.
    Makes 8 - 10 servings.
