    Streusel Sweet Potato Casserole

    14 cups, (about 5 pounds) sweet potatoes,
    ...cut into 1 inch cubes
    1/2 cup 1/2 + 1/2, (half milk/half cream)
    1/2 cup Maple syrup
    1 teaspoon vanilla extract
    3/4 teaspoon salt
    1 large lightly beaten egg
    cooking spray
    1/2 cup flour
    1/2 cup packed brown sugar
    1/4 cup chilled butter, cut into small pieces
    1/2 cup chopped pecans, optional

    Heat oven to 375 degrees F.
    Coat a 13x9x2 inch baking dish with cooking spray.
    Place potatoes in a Dutch oven type pot. Cover
    with water. Bring to a boil. Reduce heat; simmer
    12 minutes or until tender. Drain.
    Combine the 1/2+1/2, syrup, vanilla, salt and egg in
    a large bowl, stirring with a whisk.
    Add 1/4 of the potatoes to the mixture. Place the
    rest of the potatoes in the baking dish.
    Beat the syrup/potato together with a mixer at medium
    speed until smooth.
    Pour over potatoes in baking dish.
    Combine flour and sugar in a blender/food processor;
    pulse to combine.
    Add chilled butter and pulse until mixture resembles
    coarse meal. Stir in pecans; sprinkle over potato mixture.
    Cover and bake for 15 minutes. Uncover and bake an
    additional 25 minutes or until the topping is browned
    and the potatoes are thoroughly heated.
    Makes 18, 1/2 cup servings.
