    Try adding some onion powder and a few pinches of oregano. Or use a very generous amount of chopped chives in place of the green onions. Good as a side dish or as a main meal for two along with a tossed salad.

    List of Ingredients




    1 1/2 c. fresh breadcrumbs
    3 tbsp. melted butter
    4 tbsp. + 1/4 c. freshly grated Parmesan cheese
    2 large firm tomatoes, sliced (5 med. - med/large plum tomatoes)
    1/2 tsp. white granulated sugar
    salt and pepper
    1 tsp. dried basil
    1/2 tsp. garlic powder
    2 chopped green onions
    2 beaten eggs
    1/2 c. half + half, or low fat milk
    1/2 c. grated Swiss cheese

    Recipe



    Preheat the oven to 400. Grease a 9" pie plate.
    Combine the bread crumbs, butter and the 4 tbsp. Parmesan cheese together.
    Press into the pie plate and bake for 10 minutes.
    Remove from oven.
    Set oven temperature to 350.
    Spread the tomatoes in a layer on the crumb crust. (if you have extra tomato slices, just make a 2nd layer).
    Mix the sugar, salt, pepper, basil, garlic powder and green onions together.
    Then sprinkle on top of the tomato slices.
    Whisk the eggs together with the half + half and the grated Swiss cheese.
    (You may add a little salt and pepper in with the egg mixture, if you wish.)
    Pour the egg mixture over top of the seasoned tomatoes.
    Sprinkle the additional Parmesan over the egg mixture and bake for 30 minutes.
    Makes 6 servings.
