    Tomato Fritters

    1 cup flour
    1 teaspoon baking powder
    1 teaspoon granulated white sugar
    3/4 teaspoon salt
    1/4 teaspoon dried parsley
    1, 28 ounce can tomatoes, cut into 1/2 inch pieces and drained
    1 Tablespoon finely minced fresh onion
    1/2 teaspoon Worcestershire sauce
    2 eggs
    vegetable oil for frying

    Combine the flour, baking powder, sugar, salt and basil together
    in a large bowl and set aside.
    Toss lightly together, the tomatoes, onion parsley and
    Worcestershire sauce.
    Add to the flour mixture, but do not mix.
    Beat the eggs together in a small bowl and add to the flour/tomato
    bowl. Blend lightly with a fork.
    Pour 1/4 inch oil in a heavy frying pan and heat on a medium heat.
    Drop in the batter by tablespoons, patting down with the back of a
    spoon.
    Fry until golden brown on one side, then turn and fry other side.
    Keep fritters warm until serving time.
    Makes 26 or 4 - 6 servings.
