    Tomatoes with Spinach Stuffing

    List of Ingredients




    1 cup Italian seasoned breadcrumbs
    1, 10 ounce package frozen chopped spinach,
    ...defrosted + squeezed dry
    3 lightly beaten eggs
    1/4 cup melted butter
    1/4 cup grated Parmesan cheese
    1/2 teaspoon Worcestershire sauce
    1/2 teaspoon minced garlic
    salt and pepper to taste
    6 slices, 1/2 inch thick tomatoes

    Recipe



    Preheat oven to 350.
    Coat a baking sheet with cooking spray.
    Mix the breadcrumbs, spinach, eggs, butter, cheese,
    Worcestershire, and garlic together in a medium bowl.
    Lay the tomato slices on the sheet.
    Top with the spinach stuffing.
    Bake for 15 minutes, until just beginning to brown.
    Makes 6 servings.
