    Yams - baked candied #5, Creole style

    1, 30 ounce can Whole yams
    1/4 Cup Seedless raisins
    Juice from 1 lemon
    1 teaspoon ground cinnamon
    2 Tablespoon butter
    1 Apple, cored and sliced
    2 oranges, peeled, skins removed from sections
    1/2 cup dark brown sugar
    1/2 cup granulated white sugar

    Remove yams and place in casserole dish.
    Pour liquid from yams into a bowl.
    Add the sugars and cinnamon. Mix until the sugar is dissolved and pour over the yams.
    Mix the fruit together and add to the casserole dish.
    Dot with butter.
    Bake at 400 for about 45 minutes or until the syrup has thickened slightly and the yams look glazed.

    Try substituting peaches for oranges.
