    venison - Venison Meat Loaf + Topping

    List of Ingredients

    for the meatloaf:
    1 1/2 pounds ground venison
    1/4 pound ground pork sausage or beef
    1 medium diced onion
    1/2 cup ketchup or tomato sauce
    4 - 6 slices fresh white or wheat bread, in bite size pieces
    20 crushed saltine crackers
    1/2 cup green hotdog relish
    3 diced jalapeno peppers, optional
    1/2 cup diced celery
    1 tsp. oregano
    1/2 tsp. cilantro
    2 crushed garlic cloves and then chopped small
    ...or 1 1/2 tsp. garlic powder
    1/2 tsp. salt
    1/4 tsp. grond black pepper
    3 slightly beaten large eggs

    for the topping:
    1/2 cup ketchup for the top mixed with
    3 - 4 tbsp. brown sugar
    1 tbsp. vinegar
    1/2 tsp. chili powder
    1/2 tsp. ground cumin
    1/2 tsp. garlic powder

    Recipe

    Line a square baking pan with foil. (Not glass or a loaf pan.)
    (This saves on cleanup.)
    Mix all meatloaf ingredients together in a bowl.
    Shape into a loaf place into the baking pan.
    Cover and place in the refrigerator over night.
    This gives the flavors a chance to mingle.
    the flavors have time to do their work.
    Pour 1 cup of water in the pan with the meat loaf, but not on it.
    Coat a sheet of aluminum foil large enough to cover the pan with cooking
    spray.
    Try to slightly tent the foil above the meat loaf.
    Bake at 350 for 45 minutes.
    Drain the grease and any water that is left.
    Mix all ingredients for the topping.
    Cover the top of the meatloaf with the topping.
    *Place back into oven, uncovered, and bake for another 45 minutes.*
    Makes 4 - 6 servings.

    Keep an eye on it so that the topping does not burn.
    If the topping starts to burn lightly cover with aluminum foil, again coated
    with cooking spray and reduce heat.
    *Variation: peel some potatoes, onions and carrots and place along the sides
    of the meatloaf. Cover with foil and bake for the last 45 minutes. Then
    remove
    the foil and broil for a few minutes to slightly brown the topping.
