    Banana & Chocolate Chip Muffins

    Recipe Introduction


    This is a great way to use up over-ripe bananas.


    List of Ingredients


    • 1 cup white sugar
    • 1/2 cup margarine
    • 1 egg
    • 3 ripe mashed bananas
    • 3 cups plain flour
    • 1 teaspoon bi carb soda
    • 1 teaspoon vanilla
    • 1/2 cup of chocolate chips


    Instructions


    1. Preheat oven to 180 degrees Celsius.
    2. Melt the margarine, add sugar and then mix well.
    3. Mix in the egg until well combined.
    4. Add the mashed bananas and vanilla. Stir.
    5. Sift the flour and bicarb soda together, and mix with the other ingredients until just combined.
    6. Stir in the chocolate chips or walnuts. Do not overmix.
    7. Divide between muffin pans and fill each tray 3/4 full. Bake in the oven until golden brown (approx 15 minutes).
    8. If you do not fill all the muffin tray with mixture, add water to the empty sections. This will help preserve the tray, and will add moisture to the oven.


    Final Comments


    Variation: you can use walnuts instead of chocolate chips, or you can use both for really delicious muffins!
