    Orange Coconut Cake

    List of Ingredients


    • 1/2 cup dessicated coconut
    • 1 cup milk
    • 125g butter
    • 1 tablespoon granted orange rind
    • 1 cup castor sugar
    • 2 eggs
    • 1 3/4 cups of self raising flour, sifted


    Instructions


    1. Combine coconut and milk in a bowl. Let stand for 1 hour.
    2. Using an electric mixer, cream the butter, sugar and rind until light and fluffy.
    3. Beat in eggs until well combined.
    4. Stir in 1/2 coconut mixture, and then 1/2 sifted flour. Then stir in the rest.
    5. Pour into loaf pan and cook in a moderately slow oven (160 degree c) for 1.5 hours
    6. Ice with orange icing (butter, icing sugar, orange juice and orange rind).
