    List of Ingredients


    • 3 eggs
    • 6 oz caster sugar
    • 2 lemons (juice and rind)
    • 3 tablespoons hot water
    • 2 tablespoons gelatin powder
    • 1/2 pint whipping cream


    Instructions


    1. Grate the lemon zest and squeeze out the juice into a bowl.
    2. Seperate the eggs and add the egg yolks to half the sugar.
    3. Whisk the egg yolk/sugar mixture until it is creamy, and becomes a pale yellow colour.
    4. Using a clean bowl, whisk the egg whites, adding the rest of the sugar as you go. Whisk the mixture until it becomes very stiff and firm peaks form.
    5. Add the egg yolks to the egg whites.
    6. Whip the cream and add to the other mixture, folding them together.
    7. Place three tablespoons of hot boiled water in a cup and then sprinkle the gelatin on top. Stir until dissolved.
    8. Pour the lemon zest and juice into the gelatin solution and stir again.
    9. FOld the lemon and gelatin mixture gently into the souffle mixture.
    10. Pour into individual serving glasses and refrigerate for at least 4 hours.
