    List of Ingredients


    • 1 cup plain flour
    • 1 tablespoon soft mix icing sugar
    • 75g butter, cubed
    • 1 tablespoon ice cold water
    • 2 eggs
    • 1/4 cup of sugar
    • 1/3 cup thickened cream
    • 1 lemon, finely grated
    • 1/4 cup lemon juice


    Instructions


    1. Preheat oven to 200 celsius (or 180 if fan forced oven).
    2. Combine plain flour, icing sugar and butter in a food processor. Process until mixture forms breadcrumbs. Add water until the mixture comes together. Add water and process until mixture comes together. You may need to add a little more water.
    3. Roll out pastry between two sheets of glad wrap or glad bake. Place in the fridge to let the pastry rest for 10-15 minutes.
    4. Price base of pastry with a fork. Place pastry in either a flat tin or pie tin etc. Bake for about 15 minutes. Leave to cool.
    5. Reduce the oven to 180 celsius.
    6. Whisk together eggs, sugar, cream, lemon rind and juice until smooth. Pour mixture into pastry case.
    7. Bake in oven for 15 to 20 minutes until mixture is just set. Leave to cool. Dust with icing sugar and cut into wedges.
