    Roast Chicken and Vegetables

    Instead of cooking a whole roast chicken, sometimes it's easier to roast chicken breasts, particularly if you are cooking for one or two.


    List of Ingredients


    • 1 chicken breast fillet per person
    • pumpkin
    • potatoes
    • carrots
    • rosemary, thyme, basil to taste


    Instructions


    1. Mix together some olive oil, rosemary, thyme and basil.
    2. Coat chicken breast with oil mixture. Wrap in foil, and place on a baking tray.
    3. Cut vegetables, and heat in the microwave for about 10 minutes, until half cooked. Place in a frying pan with some oil, and fry until the vegetables are crisp on the outside.
    4. Place vegetables in the baking tray.
    5. Cook chicken and vegetables for 1 - 1 1/2 hours, turning chicken and vegetables every 20-30 minutes.
