    List of Ingredients


    • 700g potatoes, peeled and cubed
    • 3 tablespoons vegetable oil
    • 1 small onion, chopped
    • 15-30g butter
    • salt and pepper


    Instructions


    1. Put potatoes in a saucepan with cold salted water. Bring to the boil. Simmer and then drain. Turn onto a tea towel, and pat dry.
    2. Heat oil in a frying pan, on moderate heat. Add potato cubes and fry until they start to turn golden brown (about 10 mins). Stir and turn frequently so they brown evenly on all sides.
    3. Add onion. Add butter, season with salt and pepper. Cook for a further 2 minutes, stiring constantly.
