    Zucchini and Parmesan Soup

    List of Ingredients


    • 1 clove garlic
    • 1/4 cup chopped basil
    • 1 kg chopped zucchini
    • 1 teaspoon salt salt
    • 3 cups chicken stock
    • 1/4 cup cream (or as to taste)
    • 1/2 cup grated parmesan (or as to taste)


    Instructions


    1. Heat oil in large saucepan. Add garlic, basil, zucchini and salt. Cook, stirring, over a low heat until zucchini is tender (about 10 mins)

    2. Add stock and bring to boil, then simmer partially covered for about 15 mins.

    3. Blend/process until smooth. Add cream, parsley (if desired), pepper to taste, stir until hot. Stir in parmesan cheese.

    4. Serve topped with extra cheese, parsley and pepper.
