    List of Ingredients


    • 1 cup red lentils, rinsed and drained
    • 2 cups vegetable stock
    • 1/2 teaspoon ground tumeric
    • 2 gloves garlic
    • 1 chopped chilli
    • 2 teaspoons ground cumin
    • 2 teaspoons ground coriander
    • 2 tomatoes chopped, or a tin of crushed tomatoes
    • 1/2 cup coconut milk (optional)


    Instructions


    1. Heat oil in a saucepan and add onion. Cook until soft, then add garlic, chilli, cumin and coriander. Cook 2-3 mins until fragrant.
    2. Add lentils, stock and tumeric, and bring to the boil. Reduce the heat and simmer covered for 10 mins (until just tender). Stir occasionally to make sure the mixture doesn't stick to the bottom. Add the tomatoes.
    3. Stir in the coconut milk until heated through.


    Final Comments


    Serve with rice.
