    List of Ingredients


    • 500g sultanas
    • 250g currants
    • 250g raisins
    • 300g pitted prunes
    • 400g glace fruit
    • 200g chopped pecan nuts
    • 1/2 cup orange marmelade
    • 1 cup brandy
    • 500g butter
    • 500g brown sugar
    • 8 large eggs
    • 3 cups plain flour, sifted
    • 1 cup self raising flour, sifted
    • 2 teaspoons mixed spice
    • 2 teaspoons ground cinnamon
    • 125g blanched almonds
    • 125g additional glace cherries


    Instructions


    1. Combine fruit, nuts, marmalade and brandy in a bowl. Mix well. Cover and stand 3-4 days.
    2. Cream butter and sugar until light and fluffy.
    3. Beat in eggs one at a time, beating well after each addition.
    4. Add creamed mixture to fruit mixture. Mix well.
    5. Fold in sifted flour and spices.
    6. Spoon mixture into a greased and paper lined 25cm swquare cake pan. Smooth the surface and arrange almonds and cherries decoratively on top of the cake
    7. Bake in 150c oven for 3.5-4 hours
    8. Wrap cake well in a clean cloth and stand 8 hours, or until completely cold. When cold, remove from pan.
