    List of Ingredients


    • 1 cup raw sugar
    • 200g butter, chopped
    • 200g dark chocolate, chopped
    • 1/4 cup hot water
    • 1 tablespoon instant coffee powder
    • 2 tablespoons vanilla essence
    • 3 eggs
    • 3/4 cup of plain flour
    • 2 tablespoons cocoa powder
    • 1 1/2 teaspoons baking powder
    • cocoa powder, to serve


    Instructions


    1. Preheat oven to 160c. Grease and line a 22cm cake pan.
    2. Combine the butter, chocolate, water and coffee powder in a saucepan over low heat. Cook, stiring constantly for 5 minutes or until mixture is smooth. Remove from heat and pour into a bowl.
    3. Add the vanilla essence and raw sugar. Mix well to combine. Stir in the eggs, one at a time, mixing well after each addition.
    4. Sift the flour, cocoa powder and baking powder together and whisk into the chocolate mixture. Pour into the prepared pan, and bake 50-60 minutes, or until crumbs cling to a skewer when inserted in the centre.
    5. Cool in the pan for 10 minutes before turning onto a wire rack.
    6. To serve; dust with extra cocoa powder and serve with thick cream, or icecream, if desired.
