    This is a great dip for parties. You can serve it in a hollowed out round loaf of bread, with the top cut off.


    List of Ingredients


    • 400g English spinach
    • 30g butter
    • 1/2 teaspoon coriander
    • pinch cayenne pepper
    • 2 spring onions, roughly chopped
    • 1 clove garlic
    • 125g (1/2 cup) sour cream


    Instructions


    1. Remove the stems from the spinach and place in a an. Cover and cook for 2 mins. Drain, and reserve 1/4 cup of the cooking liquid. Cool spinach and squeeze dry
    2. Melt butter in a small pan. Add remaining ingredients, except for sour cream, and cook until onion is tender. Cool.
    3. Place in a food processor until finely chopped. Add the spinach and process, gradually adding the reserved liquid
    4. Stir though sour cream and serve.
