    Food for Thought Minneapolis Public Library Cookbook


    Recipe Introduction


    This recipe is from a cookbook that was a fund raiser and all the recipes in it are from employees or patrons of the Minneapolis Public Library, my former work place.


    List of Ingredients


    • 5 eggs, beaten
    • 1/2 cup flour
    • 1 cup sugar
    • 1/2 tsp nutmeg
    • 1/2 tsp cinnamon
    • 1/2 tsp salt
    • 1/4 cup soft butter
    • 2 cups milk
    • *1 cup coconut (*optional*)


    Instructions


    1. Preheat oven to 350 degrees.
    2. Grease and flour a 10" pie pan.
    3. Place in medium sized mixing bowl, all of the above mentioned ingredients. The eggs should be beaten.
    4. Bake for 30 minutes at 350.
    5. ***If necessary, turn oven up to 400 degrees for an ADDITIONAL 10 to 15 minutes, till light golden brown and puffy. The pie will shrink down after cooling off.


    Final Comments


    The pie may be eaten warm or cold and only stays fresh for maybe 2 days.
