CHOCOLATE MARSHMALLOW COOKIES

List of Ingredients
- 1/2 cup shortening
- 1 cup sugar
- 1 egg
- 1 tsp vanilla
- 1/4 cup milk
- 1 3/4 cup flour
- 1/2 tsp salt
- 1/2 tsp soda
- 1/2 cup cocoa
- marshmallows, cut in half

- FROSTING INGREDIENTS
- 3 Tbsp salted butter, soft
- 3 Cups powdered sugar
- 3 Tbsp baking cocoa
- 1 pinch salt
- 4 to 6 Tbsp milk
Instructions
- Cream together the shortening and sugar.
- Blend in the wet ingredients.
- Blend in the dry ingredients, except for marshmallows.
- Drop by teaspoonfuls onto a cookie sheet. Bake at preheated 350 degree oven for 8 minutes.
- Pull out cookie sheet and place 1/2 marshmallow on top, cut side down. Bake an additional 2 minutes.
- Remove from cookie sheet immediately and transfer to cooling surface.
- FROSTING INSTRUCTIONS:
- In a medium bowl, cream butter, sugar, cocoa and salt with an electric mixer. Add enough milk for spreading consistency. Spread on cooled cookies.
Final Comments
This makes 30 to 36 cookies.
