    CHOCOLATE MARSHMALLOW COOKIES

    List of Ingredients


    • 1/2 cup shortening
    • 1 cup sugar
    • 1 egg
    • 1 tsp vanilla
    • 1/4 cup milk
    • 1 3/4 cup flour
    • 1/2 tsp salt
    • 1/2 tsp soda
    • 1/2 cup cocoa
    • marshmallows, cut in half
    • ____________________
    • FROSTING INGREDIENTS
    • 3 Tbsp salted butter, soft
    • 3 Cups powdered sugar
    • 3 Tbsp baking cocoa
    • 1 pinch salt
    • 4 to 6 Tbsp milk


    Instructions


    1. Cream together the shortening and sugar.
    2. Blend in the wet ingredients.
    3. Blend in the dry ingredients, except for marshmallows.
    4. Drop by teaspoonfuls onto a cookie sheet. Bake at preheated 350 degree oven for 8 minutes.
    5. Pull out cookie sheet and place 1/2 marshmallow on top, cut side down. Bake an additional 2 minutes.
    6. Remove from cookie sheet immediately and transfer to cooling surface.
    7. FROSTING INSTRUCTIONS:
    8. In a medium bowl, cream butter, sugar, cocoa and salt with an electric mixer. Add enough milk for spreading consistency. Spread on cooled cookies.


    Final Comments


    This makes 30 to 36 cookies.
