    Magic Peanut Butter Middles

    Recipe Introduction


    This recipe takes time, but is good in the final results. Kids and adults will love them.


    List of Ingredients


    • 1 1/2 cups flour
    • 1/2 cup unsweetened cocoa powder
    • 1/2 tsp baking soda
    • 1/3 cup white sugar
    • 1/3 cup packed brown sugar
    • 1/2 cup butter or shortening, softened
    • 1/4 cup peanut butter
    • 1 egg
    • 1 tsp vanilla
    • 1 to 2 Tbsp milk or water
    • ____________________________________
    • 3/4 cup confectioners sugar
    • 3/4 cup peanut butter


    Instructions


    1. Preheat oven to 375 degrees.
    2. In small bowl, blend flour, cocoa and baking soda. Mix until well blended.
    3. In large bowl beat sugar, butter or shortening and 1/4 cup peanut butter until light and fluffy. Add vanilla and egg and 1 to 2 Tbsp water or milk. Blend well. Set aside.
    4. TO MAKE FILLING: combine confectioner's sugar and 3/4 cup peanut butter. Blend well.
    5. Roll filling into 30 - 1 inch balls. For each cookie, with floured hands, shape about 1 Tbsp of dough around 1 peanut butter ball, covering completely. You might need more, just press it in and cover peanut butter.
    6. Place cookies 2 inches apart on an ungreased cookie sheet. Flatten with glass dipped in sugar. ** I skipped that part because they are sweet enough, anyway.
    7. Bake in a preheated oven at 375 degrees for 7 to 9 minutes. When cookies are done, they should be set and slightly cracked.
