    Old Fashioned Oatmeal Raisin Cookies

    Recipe Introduction


    This is my favorite recipe for this type of cookie. My mother even asked for it and she is in her 70's. She's made many, many oatmeal raisin cookies in her life, but none quite like this one.


    List of Ingredients


    • 1 cup golden raisins
    • 1 cup water
    • 3/4 cup Crisco
    • **1 1/2 cup sugar
    • 2 eggs
    • 1 tsp vanilla
    • 2 1/2 cups flour
    • 1 tsp baking soda
    • 1 tsp salt
    • 1 tsp cinnamon
    • 1/2 tsp baking powder
    • 2 cups dry oats
    • 1/2 cup walnuts, optional


    Instructions


    1. Preheat oven to 400 degrees.
    2. In a small sauce pan, dump in 1 cup golden raisins and 1 cup water. Bring to a boil and then simmer the raisins for 15 minutes.
    3. Drain the raisins, but KEEP THE RESERVED LIQUID. Add enough water with the raisin juice to make it equal 1/2 cup. This will be put in with the wet ingredients before the dry ones are added.
    4. Mix together in large mixing bowl, crisco, sugar, eggs and vanilla. Stir in the reserved liquid and raisins.
    5. Slowly blend in the rest of the ingredients, I used a wooden spoon. Doesn't really matter, though.
    6. Drop by rounded tbspful onto ungreased cookie sheets. Bake in a preheated oven at 400 degrees F. for about 8 to 10 minutes. Cool on wire racks.

    8. **The 1 1/2 cups sugar can be substituted with PART Splenda, if desired. I use it to cut down on the sugar intake. Maybe use 1 cup of sugar and 1/2 cup of Splenda, if desired.


    Final Comments


    This recipe makes about 4 to 5 dozen cookies, depending on the size. Store in air tight containers.
