    PECAN PIE BARS

    List of Ingredients


    • 2 cups flour
    • 1/2 cup sugar
    • 1/8 tsp salt
    • 3/4 cup butter, cut up
    • 1 cup firmly packed light brown sugar
    • 1 cup light corn syrup
    • 1/2 cup butter
    • 4 large eggs, beaten
    • 2 1/2 cup finely chopped pecans
    • 1 tsp vanilla extract


    Instructions


    1. Preheat oven to degrees.
    2. BASE - Combine flour, sugar and salt in a large bowl and cut in 3/4 cup butter with a pastry cutter or 2 knives, till it resembles coarse crumbs.
    3. Press mixture into a greased 13x9x2" pan with a piece of waxed paper, pressing down with your palms.
    4. Bake in a preheated oven at 350 for about 17 to 20 minutes and cool.
    5. TOPPING - Combine brown sugar, corn syrup and 1/2 cup butter in a saucepan; bring to a boil over medium heat, stirring gently. Remove from heat.
    6. IMPORTANT - Do next in order given. Beat the 4 eggs. Stir in 1/4 of the corn syrup mixture into beaten eggs mixture. Then add to the rest of the hot mixture. Stir in the pecans and the vanilla and pour over topping.
    7. Bake at 350 for 30 to 35 minutes in a preheated oven at 350 degrees.

    Cool before cutting.
