    BAKED POTATO SOUP

    Recipe Introduction


    This is much like the soup at Tony Roma's restaurant.


    List of Ingredients


    • 4 large potatoes
    • 2/3 cup butter
    • 2/3 cup flour
    • 1 1/2 quarts milk
    • salt
    • 4 green onions, chopped
    • 1 cup sour cream
    • 2 cups crisp, cooked and crumbled BACON
    • 5 oz grated cheddar cheese


    Instructions


    1. Heat oven to 350 degrees and bake the potatoes till tender.
    2. Melt the butter in a medium saucepan.
    3. Slowly blend in the flour with a wire whisk until blended thoroughly.
    4. Gradually add the milk to the butter/flour mixture, whisking constantly.
    5. Whisk in salt, stir occasionally.
    6. Cut up the baked potatoes in half, scoop out the meat and set the peels aside.
    7. When milk mixture is very hot, whisk in potato.
    8. Add green onions and the potato peels, if desired.

    9. Whisk well and add the sour cream and crumbled bacon. Heat thoroughly.
    10. Add cheese in a little at a time until it is melted in and serve.
