    My sis loves this chili. Now she's going to know just how easy it is to make. I always let the people I feed think I work terribly hard to make them happy... Don't tell them that, though. Just bask in the glory of feeding the ones you love.


    List of Ingredients


    • 4 Tbsp. veg or olive oil
    • 4 bone & skin -less chicken breasts, halved & cubed
    • 3-4 Tbsp. Sis's Chili Spice or add your favorite chili seasonings
    • 1 sm onion, chopped (add bell peppers, garlic, any thing you like too)
    • 1 cup chicken stock/broth
    • 1 can crm of chicken soup
    • 1 can diced green chilies
    • 1-2 cans great northern or cannellini beans
    • 1 can whole kernel or 1 cup frozen corn
    • grated colby/monterrey jack/pepper jack cheese
    • sour cream(optional)
    • diced tomato(optional)
    • tortilla chips(optional)
    • green onions, sliced diagonally(optional)
    • fresh cilantro, chopped(optional)


    Instructions


    1. Heat the oil in your soup pot. Pat your chicken dry with paper towels and rub in seasonings. Cook (MEDHI) chicken with onion and other veggies of your choice for 3-5 minutes.
      PS-small diced carrots are so good in this. Most people never notice them.
    2. Stir in chicken broth, soup, green chilies, corn and another sprinkle of chili spices. Bring to a simmer. Now is a good time to taste your chili and add anything you think it needs. Heat 10-15 minutes.
    3. Stir in the beans and a handful of cheese. Turn to LOW heat and let cook 5-20 minutes.
    4. Serve in BIG bowls.


    Final Comments


    I like to garnish this with some of each of the optional ingredients, until my bowl has a topping mountain on it, but what you do with it once it's in your bowl is up to you.
