Recipe Introduction
No one ever made cookies better than my Mom. Bless her, she is gone, now but her recipes linger on.
List of Ingredients
1 c. Buttered softened 1/2 cup white sugar
1/2 c. brown sugar 2 eggs
1 tsp. Vanilla extract 2 c. flour
1/2 tsp. salt 1 tsp ground cinnamon
1 tsp. baking soda 1/4 tsp. ground nutmeg
2 c. quick oats 1/2 c. chopped walnuts 1/2 c. raisins
Recipe
In a small saucepan, combine raisins and enough water to cover. Bring to boil, and remove from heat. Preheat oven to 350 F. Grease a cookie sheet. Drain plumped raisins, reserve 6 tablespoons of the liquid.
In a large bowl, cream butter and sugars. Gradually add eggs, vanilla and the 6 tablespoons of water from raisins. Mix until light and fluffy. Sift together the flour, baking soda, salt, cinnamon and nutmeg. Stir into the creamed mixture. Stir in the oats, raisins and walnuts. Mix just until combined. Dropped by rounded tsps. onto the prepared cookie sheet. Bake for 12 to 15 minutes until the edges are golden. Cool on racks. Makes approximately 3 1/2 dozen. Enjoy
