    Lump Crab Stuffed Mushrooms

    List of Ingredients


    • 2 pounds large mushrooms
    • 2 Tbls. flour
    • 1 1/2 tsp. dry mustard
    • 2 tsp. Worcestershire
    • 1/2 tsp salt
    • 1/8 tsp. pepper
    • 3/4 cups cream
    • butter
    • 1 pound lump crab meat
    • 2 egg yolks, beaten
    • 2 Tbls. chopped parsley
    • lemon juice
    • 1/2 cup grated Parmesan cheese


    Instructions


    1. Preheat oven to 425.

    2. Wipe and clean mushrooms with a damp cloth or mushroom brush.
      Remove stems as you go ... and set aside (add any caps that break to the stem pile) Chop stems.

    3. In medium skillet over medium heat ...
      Melt 3 Tbls. butter
      Add chopped stem pieces
      Cook until tender

    4. Stir in flour, mustard, Worcestershire, salt and pepper.
      Add cream and cook, stirring, until thickened ..... REMOVE from heat
    5. Stir in crab, egg yolks, parsley and 2 teasp. lemon juice
    6. In large skillet over medium heat, in 1/4 cup melted butter ....
      Place mushroom caps in skillet (opening facing up) and cook (do not stir) 5 minutes
    7. Fill with crab mixture.
      Sprinkle with cheese
      Place in a shallow baking pan

    8. Bake 12 - 15 minutes (until hot) or 15 - 20 minutes for crisper tops.

    9. Top with a little squeeze of lemon juice it desired .... ENJOY!
