    In Texas BBQ = Brisket. This is a good one!

    List of Ingredients




    12 to 14 lb. brisket
    1/2 C Willingham’s cajun hot seasoning
    1/2 C all purpose rub
    1 C vegetable broth
    1/2 C olive oil

    Recipe



    Trim brisket of excess fat leaving some to keep it moist. Sprinkle with seasoning and place on smoker, fat side up, over indirect heat (225 degrees). Cook brisket for 1 to 1 1/2 hours per pound or until the internal temperature reaches 180 degrees. During the cooking process you will want to sprits the meat with the oil and broth mixture to keep it from drying out. Remove from the smoker and allow to rest for 20 to 30 minutes before slicing. Use oak or hickory wood for smoke for the first 2 to 3 hours.
